Herb Salmon and Potato Cup

I think that when it comes to salmon, the simpler the better. Salmon already have a very distinct flavor even without any condiments added.

So when you have no idea what’s for dinner, salmon could just be the easiest answer!


Herb Salmon

Makes 2 portion


  • 400 gram of salmon
  • 1 tsp Dry basil
  • 1 tsp Dry oregano
  • 1 tsp Dry thyme
  • 1 tsp Dry Italian parsley
  • Salt – as you like
  • Black pepper – as you like
  • 1 tbs of Olive Oil

Note: If you can’t find the dry ingredients individually, you can get the ‘Italian Herbs’ dry ingredients
from ‘Master Foods’ brand which basically contains all of the listed dry ingredients above.

Things that you need to do:

Preheat your oven to 180 C. Line a pan with a foil and grease the foil slightly with butter then set it aside.

Mix the dry herbs with olive oil, salt, and black pepper in a large bowl (you can add in more herbs if you
like). Rub the salmon with the herbs mix and let it rest for about 20 minutes.

Bake the fish in the oven for about 10 min-15 minutes. Serve with the potato cup (recipe below).

Note: You can also use oven toaster to bake your salmon, just make sure that you cover the salmon with the
foil completely to avoid it getting burned.

Now for the potato cup.


Potato Cup


  • 3 large potatoes
  • 1 dollop of sour cream
  • 1 dollop of cream cheese
  • 1 Tbsp Butter
  • Broccoli (you can replace it with mince parsley if you don’t like broccoli)
  • Black pepper – as much as you like
  • Dash of Parmesan cheese
  • Slice of Cheddar cheese for topping
  • Sliced of smoked salmon or salmon or sausages (or anything that you would like to put in the potato cup ;))

Things that you need to do:

Preheat your oven to 180 C.

Boil the broccoli till it is cooked then puree it using a food processor or a hand blender. You can use fewer or more broccoli according to your liking.

Cut the potato into 4 cubes then cook it in the steamer (or boil it). You can leave the skin on or peel it off if you don’t like it. Once the potato is cooked, mash it using the hand blender or mortar and pestle.

Strain your potato into a fine sieve. By doing this the potato texture will be smooth and buttery.

Mix the potato with the butter, sour cream, cream cheese, parmesan cheese and broccoli puree. Add the pepper to taste.

Put potato in the baking cup till the cup is half full, then add in a slice of salmon or smoked salmon or sausages and cover it with the potato mixture till the cup is full.

Put a slice of cheddar cheese on top of the potato cup. Bake it for 20 minutes.
